Some years back I wanted to invite our neighbor to view our Church General Conference,  so I thought I would sweeten the deal with this Apple Cinnamon Coffee Cake.

I got the recipe for this coffee cake in a cute Bed & Breakfast cookbook that I picked up at a Scholastic Book Fair years ago when the girls were in elementary school.  I had all the ingredients and it looked quick and easy.  It was.

When I took it out of the oven I was tempted to cut a piece for myself, but I abstained and headed over to our neighbor’s farmhouse.  She brought the empty pan back the next day, raving about how good it was and that they were fighting over who got the last of it. So I was thinking I had better fix some and see for myself.

I made a double batch because I needed something to share at a women’s social at church that week. Good thing I doubled it or I would have had a one-man mutiny at my house. It was a big hit with my husband, who is crazy about my apple pie and this was the closest he could get to it that week.

Next time I make this, I might have to make some of this Mexican Hot Chocolate, in keeping with the cinnamon theme.

So, this recipe also has some sentiment tied to it as it is one of the first recipes that I posted on our very first blog back in 2011. The photo is original from that post and was one of my first experiments with staging a food photo shoot. It’s a process.

Apple Cinnamon Coffee Cake

Description

Serve this coffee cake with your favorite warm beverage, or a cold glass of milk, on a cool Fall morning. Total apple and cinnamon yum.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 cup Crisco shortening
  • 1 egg
  • 1/2 cup milk
  • 1 teaspoon vanilla
  • 2 cups peeled, thinly-sliced Gala apples
  • 1/2 cup firmly packed brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/3 cup melted butter


Instructions

  1. Preheat oven to 400° F.
  2. In a medium bowl, sift together flour, sugar, baking powder, and salt, then cut in shortening.
  3. Combine the egg, milk and vanilla, and beat lightly until well mixed. Add to the dry ingredients and mix until moistened–batter will be stiff.
  4. Spread the batter into a well-greased 8-inch square pan and arrange the sliced apples evenly over the top.
  5. Combine the cinnamon, nutmeg and brown sugar and sprinkle over the apples.
  6. Drizzle the melted butter over the sugar and spices and bake about 25 minutes.
  7. Serve warm.
