Tortellini Skewers are a quick, easy, and fun appetizer for anytime. But this could be a real timesaver during the holidays!

The great thing about this appetizer is that the hard part–making the tortellini–is already done for you. Your job is just to boil the tortellini, skewer them, and serve them with prepared sauces (unless you really want to make your own sauces). It’s so easy, and people really love it. It’s not the same old, same old appetizers you see. (Not that there’s anything wrong with crockpot meatballs, veggie tray, or cheese ball with crackers!)

For another fun option, I’ve taken half skewers (I couldn’t find that size so I just carefully cut regular skewers in half myself) and alternated cherry or grape tomatoes, little mozzarella balls, and tortellini. This was a BIG hit and, again, not the usual finger food you find at an event.

My preference is to serve these Tortellini Skewers with a marinara sauce and a pesto sauce. But you can use whatever sauces you prefer with pasta.

Ingredients

refrigerated Tortellini
olive oil
Pesto sauce
Spaghetti or Marinara sauce
wooden skewers


Instructions

Boil pasta as directed on package. DO NOT OVERCOOK. When done, pour into colander and rinse well with cold water.  Allow to cool and drain completely.
Toss cooked tortellini in a bowl with a little olive oil.  Either store in a container in fridge, or go ahead and skewer the pasta to serve immediately.
Serve with pasta sauces of your choice, but my personal favorite is pesto (which I also bought premade).
