My mother passed away in 2015, but I have her recipe boxes. Recently, I sat down and pored over her recipes — some she had made and some she had saved, hoping to get to them someday. Since I’m a sucker for “old-fashioned” desserts, this Quick Apple Cake won a top spot in my recipes to try.
I don’t remember her ever making this, but she did handwrite “good!” and underlined it. Having now tried it, I must agree.
My late mother-in-law had a recipe for Persimmon Pudding that tastes a lot like this, also with a buttery sauce. I have yet to hunt down that recipe, but it’s on my must-do list for upcoming blog posts.

For now, please make this simple cake with its fall-inspired spices and its decadent sauce. Grab a big comfy sweater, go outside on your porch swing, and slowly enjoy this simple pleasure. If you’re concerned about the rich sauce, just have a nice salad for dinner first…you won’t feel any guilt!

Quick Apple Cake

Description
Quick Apple Cake is a simple yet satisfying fall dessert with nostalgic vibes and a buttery sauce!
Ingredients
1 cup sugar
1/4 cup butter, softened
2 eggs beaten
2 or 3 apples, peeled and grated
1 cup all-purpose flour
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon
Sauce:
1 cup sugar
1/2 cup half-and-half
1/2 cup butter
1 1/2 teaspoons vanilla
Instructions
Cream sugar and butter until light and fluffy; add eggs and beat well. Stir in apples.
Combine flour, salt, baking soda, nutmeg, and cinnamon; Add to apple mixture and stir well. Pour into lightly greased 9″ baking dish (mine was a square, glass Pyrex dish).
Bake at 350° for 50 minutes or until a toothpick inserted in the center comes out with a few crumbs on it. Makes 9 servings in a square pan.
For the Sauce:
Combine sauce ingredients in a saucepan. Cook over low heat, stirring until sugar is dissolved. makes about 1 cup of sauce.
Notes
You can serve the cake warm or cold. Refrigerate any unused portions for later.
