It took me a while, but I have finally jumped onto the breakfast-from-the-fridge train with this recipe for Overnight Fruit & Nut Refrigerator Oatmeal. It is a delicious and healthy way to start the day–did that sound like a product jingle? And guess what? National Oatmeal Day is October 29th, so you will be ready to celebrate with this recipe.
There are multiple recipes there, but I have never ventured into this “genre”. Have you? I love oatmeal, and a lot of times it tastes better to me served at room temperature or cooler, so why not? And the add-in choices for oatmeal are abundant, so you can personalize your breakfast as much, or as little, as you please.
This particular recipe calls for fresh raspberries and almonds, which is a very tasty combination. I would be careful, though, if you like more oatmeal than gobs of raspberry. The recipe calls for a 6-ounce package, but the berries I “picked” were huge. Next time that I make this, and I will, I am going to chop up the berries. Seriously, when I got to the last cute little Yoplait Ouí jar of oatmeal I had about 6 giant berries in there! Have you not tried this yogurt? It is delicious and the jars are perfect little containers for so many things. If you have followed us for a minute, you will see that I have used them in several posts. I have a dozen of them in my cabinet.
So, you could substitute any fruit and nut combo of your liking in this quick and easy breakfast. It is so convenient to just reach into the fridge and pull out a jar of breakfast before a workout or a busy school morning.

Overnight Fruit & Nut Refrigerator Oatmeal

Description
A cool breakfast in a jar! How yummy and so convenient.
Ingredients
- 1/2 cup quick oats
- 2 cups milk
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 2 tablespoons brown sugar
- 1/2 teaspoon ground cinnamon
- pinch of salt
- 6-oz. package of fresh raspberries (or fruit of choice), chop if berries are large
- 2 tablespoons sliced almonds (or nuts of choice)
Instructions
- In a medium bowl, mix together the oats, milk, flavorings, brown sugar, cinnamon, and salt.
- Fold in the raspberries, then divide evenly into containers of choice. I used the 5-oz. glass Yoplait Ouí “pots”.
- Refrigerate overnight. Top with nuts before serving cold.
