Have you ever eaten a Po’ Boy Shrimp Sandwich?  These are also sold as Shrimp Burgers, in case you ever wondered about that.  On one of our past beach weeks, we hit a local seafood joint to enjoy some local fare.  I brought my leftovers back to the beach house.

Lunch time at the beach is an every-man-for-himself deal.  There are always leftovers from restaurant meals, or something we have cooked on a previous night, or peanut butter and jelly or pimento cheese sandwiches. Whatever is the quickest to eat so you can get back out on the beach.  So my popcorn shrimp leftovers were perfect for me. Mostly I just ate the cold shrimp right out of the take-out carton, but one day I was thinking I should be a little more creative.

We also had some hamburger buns from whoever was here the previous week–don’t get excited, it was family and we sometimes leave stuff for others to eat if they are going to be there right after us.  Anyway, that’s why the bun looks kind of lame in the photo.  It was fresh enough, but it got kind of smooshed.  So I placed lettuce on the bottom bun, then a good portion of shrimp, and then a little Crosse & Blackwell Cocktail Sauce, for just the right touch (it’s seriously the best one out there).  No tartar sauce for me! But you might like it.  Catsup is also an alternative, if you can’t get the cocktail sauce.

Description
