To top off your Costa Vida Sweet Pork Salad, you will need this Creamy Tomatillo Dressing. And just so you know, it makes a lot so you might not need to double it like I did the other day. Goodness. I had a 1/2 gallon of the stuff. I mean, it is so yummy, but how much are you really going to need on that dish? Of course, if you eat a lot of salads anyway, this dressing would be great to add to your arsenal.
There are some great ingredients in this dressing. One of my go-to items is the Hidden Valley Ranch Buttermilk Dressing Mix. I don’t buy bottled Ranch dressing because I prefer to make it myself. To me there is nothing worse on a beautiful salad than store-bought Ranch dressing. You know what I’m talking about. How tasty is that little packet of Ranch at your favorite fast food restaurant? Yeah, not so much.

Creamy Tomatillo Dressing
Description
The topper for your Costa Vida Sweet Pork Salad! Also good on just about any other green salad.
Ingredients
- 3 fresh tomatillos
- juice of 1/2 lime
- 1/2 cup buttermilk
- 1/2 cup mayonnaise
- 1/2 cup sour cream or whole milk plain Greek yogurt
- 1 packet Hidden Valley Ranch Buttermilk Dressing Mix
- 1 cup fresh cilantro
- 4 green onions, cut into chunks
- 2 gloves garlic, crushed
- 1/2 teaspoon salt
- 1/4 teaspoon cayenne pepper
- 4 teaspoons sugar
Instructions
- Combine all the ingredients in a blender or food processor and mix well.
- Refrigerate for at least an hour before serving.
