Today I am sharing one of my favorite recipes–and quite a popular one because it received a ton of views on our old blog–Lunch Lady Brownies. What does that even mean? Well, it means this will be an incredible dessert experience because those Lunch Ladies at your school when you were a kid really did make some yummy stuff.
Who remembers the yeast rolls that were a favorite in elementary school? Here’s a fun fact: my grandmother worked in an elementary school cafeteria for a time and would bring home a pan of leftover rolls. Oh my goodness. That was before I even knew what 1st grade was. And no, there was no public Kindergarten back then.
One of the elementary schools that my daughters attended served homemade vegetable beef soup and the best cinnamon rolls on Thursdays–or was it Tuesdays?– in the Fall/Winter time of the year and that was the most popular time to go have lunch with your kids. Yes, it was very good.
I found this brownie recipe one day on the Internet while I was looking up different food blogs. I honestly cannot remember the name of the blog where I got the recipe, but thank you if you happen to read this post. I made a few tweaks, but oh my word. This is just too good.
A friend came by this afternoon to pick up some veggies from our garden abundance, and we offered her one of these Lunch Lady Brownies. Three different times while she was eating it she looked at me and just said “Oh my gosh” because they were so good. Yes, Shaundra, I know what you mean.
So treat yourself today or tomorrow. Bake a pan of these amazing brownies, get yourself a nice cold glass of milk and just remember when you were a kid and eating brownies was such a special treat.
And please don’t leave off the icing! I am not usually a fan of iced brownies, but the way the brownie combines with the fudgy goodness of this icing–and you spread it on less than 10 minutes out of the oven–ohhhhh yes.
By the way, you can think outside the box on how you serve these brownies. I used two different sizes of cookie/biscuit cutters to make these cute little things, and added some cupcake sprinkles just for fun. And for some more fun, try some of these sweet offerings.

Lunch Lady Brownies
Description
Delicious and decadent, these brownies will be a favorite with all your friends and family. You will score major points.
Ingredients
- BATTER:
- 1 cup butter
- 2 cups all-purpose flour
- 1/2 cup cocoa
- 2 cups sugar
- 4 eggs
- 4 tsp. vanilla
- 1 cup chopped nuts (optional)
- ICING:
- 1/4 cup butter, softened
- 1/4 cup evaporated milk
- 1/4 cup cocoa
- 3 cups powdered sugar
- dash of salt
- 1 tsp. vanilla (I added this ingredient. Just thought it tasted better.)
Instructions
- Melt the butter in the microwave and put into mixing bowl.
- Add cocoa and mix until smooth.
- Add flour and sugar. Beat together and then add eggs, vanilla, and nuts, if desired. Mix until combined. Do not over stir.
- Spread evenly into greased and floured 9 x 13 baking pan (I used baking spray with flour and it worked fine).
- Bake 20-25 minutes at 350 F or until done. Check at about 20 minutes. Toothpick inserted into center should come out clean.
- Remove brownies from oven and wait only about 10 minutes to frost them. You want to frost while they are warm, not hot.;ICING–combine ingredients and spread on warm brownies.
