In honor of National Canned Luncheon Meat Week–yes there is such a thing–I am sharing a family favorite casserole–Meat Macaroni Supper .  A college roommate shared this recipe one night for dinner and I still have the original recipe card that I wrote it on.  Can you believe that?  Ahh, memories of my Junior year.  Thank you Anita Volmer.

So many good things in this casserole, but there are a couple that you might turn your nose up at.  Canned luncheon meat, Cream of something soup, and processed American cheese.  Yep.  Velveeta.  It’s just because of how health conscious and anti-processed food we have become.  But I don’t think that there is a thing wrong with bringing back some of the comfort foods of our past once in a while. And you know that they still advertise Velveeta and Rotel Tomatoes for a spicy queso dip that you can throw together at a moment’s notice.

But there are vegetables in here.  I have chopped green pepper from last year’s garden that were in the freezer, and instead of regular yellow onions, I used chopped green onions from this year’s garden.  Don’t you love walking out to the garden and picking supper?  So cool.

For some reason, there were no cans of a particular luncheon meat–let’s call it Blam (because the word I want to use seems to be messing with my post)–at Wal-Mart today, but I did find some cans of Treet–they say they are the original spiced ham.  The texture was a little softer, and I prefer Blam, but it was a good enough substitute.

So, go ahead and make some of this.  Tell your family you are celebrating the week.  Enjoy this comforting casserole. If you need something healthy for balance, try this Sauteed Spinach for a side.

You can do Body Pump tomorrow and work some of this stuff off.  That’s what I’m doing.

Meat Macaroni Supper

Description

Casserole. A comfort food your family will love.


Ingredients

  1. 2 tablespoons butter
  2. 1/2 cup chopped green onion
  3. 10 3/4 ounce can Cream of Celery Condensed Soup
  4. 8-ounce can diced tomatoes
  5. 1/4 teaspoon thyme
  6. dash of peppercorn seasoning (or black pepper)
  7. 1 cup of elbow macaroni, cooked and drained
  8. 12-ounce can  luncheon meat
  9. 1/4 cup chopped green pepper
  10. 1/4 cup shredded processed American cheese

Instructions

Preheat oven to 350 degrees F.

In a large skillet, melt the butter. Add the onions and saute until tender but not browned.

Stir in the soup, tomatoes, thyme, and pepper. Add the macaroni, luncheon meat and green pepper. Stir to combine.

Put mixture in a 1.5 quart casserole dish and top with the shredded cheese.

Bake uncovered at 350 degrees F. for about 35 minutes.
