I am a huge fan of one dish meals and the Sheet Pan Breakfast Bake is a great option for the first–or the last–meal of the day. Actually, you could serve this for any meal.  The clean-up is so easy, especially if you use parchment paper to line your pan.  I have made this twice and tried it with and without the parchment.

One pan meals are the current hot trend, I think, in meal prep so you have probably seen a few of these recipes on the internet.  I kept thinking that I needed to try one, so breakfast seemed like an easy first venture.  I learned a few things while preparing this, too:

  • Paying attention to how you arrange your foods is important–some arrangements could be unappetizing. LOL!
  • When making one dish meals for the first time, try to stay as close to the recipe suggestions as possible. The first time I made this recipe, I was unable to find the Italian-style Chicken Sausage and substituted the regular Italian-style, which worked great.  When I made this last night, I went with precooked Turkey Sausage links.  I won’t do that again because I felt like it was a little overcooked.
  • Frozen Steak Fries are a good substitute for the seasoned potato wedges that I couldn’t find at two different stores. I just added Mediterranean seasoning.  Tater Tots are also a good replacement.

I think finding recipe ingredients, that are not just your normal everyday foods, is a challenge right now because of COVID19.  I had the same issue when I was looking for Acini de Pepe for Frogeye Salad.  Stay tuned for that recipe, by the way.  Julie will be sharing that with us on a future post.  Yum.

Easy prep and clean up makes this Sheet Pan Breakfast Bake a winner for busy mornings


Ingredients

Scale
  • 3 cooked Italian-style chicken sausages
  • 2 cups frozen seasoned potato wedges (or steak fries)
  • 1 tablespoon olive oil
  • 3 large eggs
  • 1/2 cup grape tomatoes, halved
  • 12 avocadoes, quartered
  • 1/8 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Preheat oven to 400 degrees F.
  2. Line a sheet pan with parchment paper or coat with cooking spray.
  3. Place sausage and potato wedges (or steak fries) on baking sheet. Drizzle with olive oil and toss to coat. Bake 15 minutes, until potatoes are tender.
  4. Remove sheet pan from oven. Crack eggs on top and return to oven and bake about 5 minutes, until eggs are cooked. Top with tomatoes and avocado. Season with salt and pepper.
