The back story on this Eventually Chicken Soup 2.0 recipe started in November of 2011.
My sister, Julie, had recently started a food blog and had invited myself, our sister Amy, my daughter Kelsey and about 10 or so other friends to share recipes on a regular basis.
This recipe was one of the first ones that I posted on our original blog– Mormon Mavens in the Kitchen . If you clicked that link, then you know how bad my food photography was 9 years ago. I hope I have improved since then!
This particular day I was just trying to throw something in the crockpot for Sunday dinner so it would be ready when we got home from church. I had a few ingredients on hand so I threw them together. It ended up like a chicken stew, which was fine, but the next night I threw in some other ingredients and it ended up, EVENTUALLY, to be a chicken soup. Well, good. I needed a post for the blog, so yay.
Now, fast forward to 2020, with a new blog, and I am sharing this soup again because, though I can’t even believe it, that original post got over 17,000 views. What?! It was one of our Top 10 recipe posts and you know how we like to share those with you.
In true Anna form, this recipe today morphed into Eventually Chicken Soup 2.0–as I was again changing out ingredients and feeling pretty creative. I can’t believe I made it all by myself. And it can still be called Eventually Chicken Soup, but with an upgrade.
Tomorrow I am going to use it for Chicken Pie! Just take this soup, maybe reduce the liquid a little bit, and use this pie crust recipe. I have a feeling we are really going to like that Chicken Pie option. Need another idea for using this soup? Try it in one of these bread bowls.
Next Day–Well, this post is a little late, because I really wanted to try the pie. Check out this image…notice the “chicken tracks” vent holes. Couldn’t help myself. Move over Marie Callendar!

I really like the Thrive Life Veloute and Peppercorn Seasoning that I used in this soup, plus I had them on hand.

Eventually Chicken Soup 2.0
Description
This chicken soup recipe is quite tasty on its own but can morph into a delicious chicken pie, with or without the noodles, in a yummy homemade pie crust.
Ingredients
- 2 frozen boneless, skinless chicken breasts
- 3/4–1 cup frozen mixed vegetables
- 1 cup chopped fresh mushrooms
- 2–3 tablespoons chopped purple onion
- Chicken gravy, mix by package directions ( I used Thrive Life Veloute Sauce)
- 1 teaspoon Kosher salt
- 3 teaspoons Peppercorn Seasoning (Thrive Life)
- 1/2 pkg. dry onion soup mix
- 1 cup egg noodle pasta (or pasta of your choice)
- 1/2 cup whole milk Greek yogurt
Instructions
- Place all ingredients, except the pasta and yogurt, into crockpot.
- Cook on HIGH 4 hours.
- Add in pasta and cook until pasta is done.
- Add in yogurt and stir. Serve.
