When I first tried the Quinoa Cranberry Pecan Rice Blend dish at Applebee’s I was working on eating better and losing some weight.  This restaurant had just introduced some healthier options on their menu, and this rice dish was part of that.

I decided I would try to make this at home so asked the waiter if he could give me some tips on how to do it.  One tip was to use a little cranberry juice cocktail.  The chef had told him about that.

So I tried making this, but realized I was missing some other ingredients but this one turned out pretty good–and it drew almost 3000 views.  So I thought I would  bring it back.

I am going to hunt down an Applebee’s copycat recipe, but in the meantime enjoy this one.

Note:  I didn’t put quinoa in this recipe.

Long Grain & Wild Rice with Cranberries & Pecans


Description

A healthy, delicious side dish for chicken or whatever you choose.


Ingredients

Scale
  • I package Zatarain’s Long Grain & Wild Rice Blend
  • Craisins, about 1/4 cup
  • Pecans, toasted
  • 1/4 cup cranberry juice cocktail

Instructions

  1. Cook the rice according to package directions. I used my rice cooker and added the cranberry juice cocktail at the end of the steaming time.
  2. Once rice is cooked, remove from heat and blend in the Craisins and pecans, fluffing the rice as you go.
