Who doesn’t love a fresh tasty salad?   Fresh spinach combined with the crunch of fresh celery, Granny Smith apple, and toasted pecans? Heck yes.  Add some sweetened cranberries and  a tasty viniagrette and you have a delicious and healthy side for your meal.

With the addition of grilled chicken marinated with olive oil and Mediterranean seasoning, I had a whole meal!  You could add some crusty bread or crackers, as well.

I made the dressing separately so that I could get the amount I wanted without drowning my salad (ingredients starting with the oil).

Yummy, Healthy Spinach Salad


Description

  • A fresh spinach salad with crunchy and sweet ingredients and the addition of grilled chicken for a delcious meal in a bowl.

Ingredients

Scale
  • 5 ounces fresh spinach
  • 3/4 cup chopped celery
  • 3/4 cup dried sweetened cranberries
  • 15-ounce can mandarin oranges
  • 1 large Granny Smith apple, cut into bite-size pieces
  • 1 teaspoon lemon juice
  • 1/3 cup chopped pecans, toasted in butter
  • Optional: feta cheese, grilled chicken breast cut into bite-size pieces

Dressing

  • 4 tablespoons olive oil or vegetable oil
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons white wine vinegar
  • 3 teaspoons sugar (or honey, stevia, etc.)
  • 1/8 teaspoon each paprika, onion powder
  • 1 tablespoon poppy seeds

Instructions

  1. Combine the salad ingredients in a large bowl.
  2. Combine the dressing ingredients in a small bowl and whisk well.
  3. When ready to serve, dress the salad.
