Bet you are wondering what a hypocrite pie is, right?  Me, too.  I got this recipe from a friend at church, but didn’t really get an explanation of the “hypocrite” part.

So Google was asked and here is what I found:  “It’s called Hypocrite Pie because a layer of custard conceals the layer of cooked … fruit on the bottom, which contrasts so delightfully with the custard.”

Strawberry Hypocrite Pie


Description

Delicious strawberry pie with custard.


Ingredients

  • 3 eggs, beaten
  • 1/2 cup milk
  • 2/3 cup sugar
  • 1 teaspoon vanilla
  • 1 quart fresh strawberries, cut up
  • 2 Pillsbury Pie Crusts
  • 2 tablespoons butter

Instructions

  1. Place one pie crust in glass pie dish, trimming according to directions on package.
  2. Sprinkle about 2-3 tablespoons each of flour and sugar over the unbaked crust in the dish.
  3. Fill with cut strawberries.;In a small bowl beat eggs, milk, sugar, and vanilla. Pour over berries. Dot with butter.
  4. Place the other crust over the pie and seal, according to package directions. Cut vent slits in center of crust.
  5. Bake at 400 degrees F. for about 40 minutes, or until crust is golden brown.
  6. Let cool before cutting (there will be a lot of liquid in the dish).
