Make your own yummy dessert with this Creamy Homemade Butterscotch Pudding recipe!

I am a little over-the-moon about this butterscotch pudding, plus I made it at home–and impressed myself.  Let me explain…

When I chose to post on National Butterscotch Pudding Day I thought I was stepping out of my comfort zone.  The only butterscotch pudding I have ever had was from a store-bought mix.  You know the brand–it’s a household word.  And I had never heard of anyone making it from scratch.

I remember the first time that I ever ate any was when I was six years old and had to have my tonsils out before 1st Grade started.  I had a horrible sore throat, obviously, and all I could eat was soft food.  Mama made me Cream of Wheat, grits, etc.  And for dessert there was ice cream and…butterscotch pudding.  I am sure there was also vanilla and chocolate, but the butterscotch really stood out in my memory for some reason. So whenever I see it on the shelf, I have those sweet memories of my Mama taking care of me and serving me that butterscotch pudding on a cute bed tray that you could also use like an easel to prop a book on.  How cool is that? Ours was pink, I think.

Imagine my surprise when I found this recipe from Pioneer Woman (she rocks a little) and decided to give it a try.  I just thought for sure that it would be a long, detailed process.  Thankfully, I was totally wrong.  I watched the video and was like, “Really?  That’s all there is to it?”  Well, yes and let me tell you the taste is sweet–but not too–and creamy and just good stuff.

You will totally enjoy the stirring process, which takes about 10-12 minutes.  It was actually quite soothing.  A little like yoga for the soul.  You won’t get bored.

Remember those cute yogurt jars from the agua fresca post?  I could have used those this time, because pudding would be great in these–they are so versatile. But I decided to serve the pudding in my juice glasses.  So many choices for dessert dishes, right? And because we are ’bout to move into all things Fall, and because I just purchased some items to spruce up my decoration stash, I have provided a little bit of Autumn with your pudding!

Creamy Homemade Butterscotch Pudding


Description

Creamy, and just enough sweet, this Homemade Butterscotch Pudding beats the socks off of store-bought.


Ingredients

  • 1 1/2 cups light brown sugar
  • 1/4 cup cornstarch
  • 1/2 teaspoon salt
  • 3 cups whole milk (didn’t take a chance with 2%, just in case)
  • 4 large egg yolks
  • 2 tablespoons of butter
  • Whipped Cream, unsweetened

Instructions

  1. ]In a medium pan, gently whisk together the brown sugar, salt and cornstarch.
  2. In a medium bowl, whisk the milk and egg yolks together. Pour into the brown sugar mixture in the pan.
  3. Turn heat to medium and cook, stirring gently, until the mixture just starts to bubble and get really thick. This took me about 12 minutes, but it should be at least 10 minutes.
  4. Once your mixture resembles a pudding consistency, add the butter and stir until melted.
  5. Remove pan from heat and carefully spoon into dessert cups or dishes.
  6. Serve with a dollop of unsweetened whipped cream. You don’t want to overload on the sweet. Sprinkles are optional, but fun. Or shaved chocolate might be nice.
