The first time I tasted these Savory Chicken Puffs (aka Chicken Gateau) was at my first Thrive Life Convention in 2017.  That was back in my consultant days.  We had a mix-and-mingle, al fresco, the first night and these chicken puffs were in high demand!  Sadly, I was only able to get my hands on two of them, as they ran out fairly quickly.  I was able to get the recipe when they shared all the foods they made at Convention, so I was just sure I would make them at home.

That was 3 1/2 years ago.  What the heck?  And I have had the recipe in my to-do file for this blog for about 2 of those years.  Maybe I was afraid of puff pastry–have never tried it in a recipe.  But it is so easy!  At least in this particular dish and it is amazing to me how light and airy they turn out.  Who knew?  You probably did.

Most of the foods in the recipe are freeze-dried–since that is what Thrife Live is all about.  I only share this recipe because it is so delicious and so that I have a permanent spot for it in our blog.  This is not a commercial for Thrive, but feel free to check them out.  The food is all very good and top notch in quality and nutrition.

You can certainly substitute items from the grocery store, but I will say that the freeze-dried makes quick and easy prepwork and no tears on the chopped onion, which is always a plus.  That is a staple at my house.

Savory Chicken Puffs would pair well with these Cucumber Tea Sandwiches.  IF you have leftovers, I am sure they will freeze well, but I will let you know for sure.  I made these yesterday and put them in the freezer for future use.  Maybe for Super Bowl.

Savory Chicken Puffs


Description

A tasty and quick appetizer for your next get-together.


Ingredients

  • 1 pkg. puff pastry
  • 1 cup Thrive Chopped Chicken
  • 1 cup Thrive Broccoli
  • 1 cup Thrive Chopped Onions
  • 1 cup Thrive Shredded Colby Jack Cheese
  • 1 cup Thrive Shredded Parmesan Cheese
  • 1 teaspoon minced garlic
  • 1 tablespoon Italian seasoning (Thrive has one, but I was out and made up my own)
  • 3 teaspoons Thrive Chef’s Choice seasoning (an all-purpose seasoning)
  • 1 teaspoon Cholula sauce
  • 1 cup water;6 oz. Neufschatel Cream Cheese
  • 1 cup Thrive Scrambled Egg Mix (or sub 2 eggs, well-beaten);
  • 6 tablespoons additional water

Instructions

  1. Preheat oven to 400° F.
  2. In a stand mixer, add all ingredients except the cream cheese, scrambled egg mix and 6 tablespoons water. Mix well for 3-4 minutes to break down ingredients and refresh.
  3. Add cream cheese and mix until well combined and set aside.
  4. Cut each pastry sheet into 2″x 2″ squares. Place a large tablespoon of filling on each square. Bring the edges together and seal to create a ball. Place on a cookie sheet, folded side down.
  5. Mix scrambled egg mix and the 6 tablespoons of water (add water to thin, if needed), whisking well. Using a pastry brush, apply this egg wash onto each puff. Sprinkle Chef’s Choice lightly over each puff.
  6. Bake for 10-12 minutes or until golden brown.
