I literally just made up this recipe for Keto Friendly Sauteed Spinach. While I was preparing fresh green beans and potatoes that I had just picked from our garden, I realized that I needed one more side dish. We have family members who are trying to eat a Keto diet–I have mentioned that before–and they needed another option besides the green beans, since they couldn’t have those yummy fresh spuds.
There were a few handfuls of fresh spinach in the fridge that needed to be used and I had a yellow bell pepper that had seen better days but was still good for cooking.
So I pulled out a skillet and poured in some olive oil. Then I commenced to chopping a shallot, some garlic, the bell pepper and threw those in the pan. I also noticed a bag of real bacon pieces in the fridge so I just tossed some of that in, and got all of that nice and blended and smelling awesome. Then I tossed in the spinach and cooked that until it wilted and we had some yum goin’ on. It smelled pretty great in my kitchen, as well.
Don’t you love it when you can just think on your feet in the kitchen and use up some veggies or other food items that would otherwise just waste away and get dumped down the garbage disposal or tossed into the trashcan? I’m telling you, that just makes me feel so much better when I can avoid being wasteful. Have you seen the statistics on how much food we throw away on average? Ridiculous.
Try this Keto Friendly Sauteed Spinach with Spaghetti Pie, or maybe use this pizza crust and the ingredients for a delicious topping! I would just not cook the spinach and sprinkle that over top before cooking the pizza.

Keto Friendly Sauteed Spinach
Description
A quick, easy, tasty side dish that would compliment any meal. Try it on pizza!
Ingredients
- Fresh baby spinach
- 1–2 tablespoons Olive oil
- 1 yellow bell pepper, chopped
- 1 shallot, finely chopped
- 1 garlic clove, minced
- 2–3 tablespoons bacon pieces
- sea salt & black pepper to taste
Instructions
- Heat olive oil over medium-high heat.
- Add everything except the spinach and saute until slightly softened and aromatic.
- Add spinach and saute, stirring frequently, until wilted or cook until desired consistency.
