Copper Pennies

Description

A family favorite recipe passed down from Mom, Copper Pennies is a delicious marinated vegetable salad that can be a great side to your entree.


Ingredients

  • 2 lbs. carrots, sliced in 1/4 inch rounds
  • 3 small onions (I use Boiler Onions) thinly sliced
  • 1 medium green pepper, cut in thin strips
  • 1 can condensed Tomato Soup
  • 3/4 cup apple cider vinegar
  • 2/3 cup sugar
  • 1/2 cup vegetable oil
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon prepared mustard
  • 1/2 teaspoon salt

Instructions

  1. Cook carrots in small amount of boiling, salted water until just tender, about 8-10 minutes. Drain.
  2. Combine carrots, onion and green pepper in large bowl.
  3. Stir together remaining ingredients and pour over vegetables.
  4. Cover and marinate in refrigerator several hours or overnight.
  5. To serve, drain the vegetables and keep your marinade.
  6. Return any leftover vegetables to marinade and keep refrigerated.
