Easy prep and clean up makes this Sheet Pan Breakfast Bake a winner for busy mornings
Ingredients

- 3 cooked Italian-style chicken sausages
- 2 cups frozen seasoned potato wedges (or steak fries)
- 1 tablespoon olive oil
- 3 large eggs
- 1/2 cup grape tomatoes, halved
- 1–2 avocadoes, quartered
- 1/8 teaspoon salt
- 1/4 teaspoon pepper
Instructions
- Preheat oven to 400 degrees F.
- Line a sheet pan with parchment paper or coat with cooking spray.
- Place sausage and potato wedges (or steak fries) on baking sheet. Drizzle with olive oil and toss to coat. Bake 15 minutes, until potatoes are tender.
- Remove sheet pan from oven. Crack eggs on top and return to oven and bake about 5 minutes, until eggs are cooked. Top with tomatoes and avocado. Season with salt and pepper.
