Creamy, and just enough sweet, this Homemade Butterscotch Pudding beats the socks off of store-bought.

- 1 1/2 cups light brown sugar
- 1/4 cup cornstarch
- 1/2 teaspoon salt
- 3 cups whole milk (didn’t take a chance with 2%, just in case)
- 4 large egg yolks
- 2 tablespoons of butter
- Whipped Cream, unsweetened
Instructions
- ]In a medium pan, gently whisk together the brown sugar, salt and cornstarch.
- In a medium bowl, whisk the milk and egg yolks together. Pour into the brown sugar mixture in the pan.
- Turn heat to medium and cook, stirring gently, until the mixture just starts to bubble and get really thick. This took me about 12 minutes, but it should be at least 10 minutes.
- Once your mixture resembles a pudding consistency, add the butter and stir until melted.
- Remove pan from heat and carefully spoon into dessert cups or dishes.
- Serve with a dollop of unsweetened whipped cream. You don’t want to overload on the sweet. Sprinkles are optional, but fun. Or shaved chocolate might be nice.
