Keto Strawberry Jam


Description

You don’t have to be “keto” to enjoy this sugarless Keto Strawberry Jam!


Ingredients

Scale
  • 6 cups freeze dried strawberries plus 1 1/2 cups water

OR

  • 2 pounds fresh strawberries (cut off stems and remove hulls)

 

  • 1/2 cup powdered erythritol (I use Swerve brand)
  • 1 tsp. lemon juice
  • 1 tsp. glucomannan

Instructions

  1. If using freeze dried berries, allow the fruit to refresh with the water in a bowl for 10 minutes, stirring and crushing often.
  2. Place berries in a medium saucepan. (Use a potato masher to break up fresh strawberries.)
  3. Cook over medium-low heat for 5-10 minutes or until soft. It should be juicy and the berry pieces should be small.
  4. Add remaining ingredients and stir well.
  5. Spoon into an airtight container and chill in the fridge. Jam will thicken as it cools.
