Description
A delicious part of the Costa Vida Sweet Pork Salad, these black beans could also be served on their own or with any Mexican entree.
Ingredients

- 2 tablespoons olive oil (I like Goya brand)
- 2 cloves fresh garlic, minced
- 1/2 teaspoon cumin
- 2 cans black beans, rinsed & drained
- 1/3 cup tomato juice
- 1/2 teaspoon salt
- 2 tablespoons fresh chopped cilantro
Instructions
- Combine olive oil, garlic, and cumin in a small saucepan. Cook over medium heat until garlic is fragrant.
- Add black beans, tomato juice, and salt. Cook until heated through.
- Stir in cilantro just before serving.
