Garlic Black Beans


Description

A delicious part of the Costa Vida Sweet Pork Salad, these black beans could also be served on their own or with any Mexican entree.


Ingredients

Scale
  • 2 tablespoons olive oil (I like Goya brand)
  • 2 cloves fresh garlic, minced
  • 1/2 teaspoon cumin
  • 2 cans black beans, rinsed & drained
  • 1/3 cup tomato juice
  • 1/2 teaspoon salt
  • 2 tablespoons fresh chopped cilantro


Instructions

  1. Combine olive oil, garlic, and cumin in a small saucepan. Cook over medium heat until garlic is fragrant.
  2. Add black beans, tomato juice, and salt. Cook until heated through.
  3. Stir in cilantro just before serving.
