Here’s the recipe for the sweet pork in this delicious Costa Vida salad. Try it with tortillas or any other time you need some good, sweet pulled pork.

- 3–4 lb. pork butt
- 3 cans Coke, divided
- 1 1/4 cups brown sugar, divided
- dash of garlic salt
- 1/4 cup water
- 1 can diced green chilies
- 10 ounce can of red enchilada sauce
Instructions
- Combine pork, half of the Coke, garlic salt, and 1/4 cup of brown sugar in a Ziplock bag. Marinate for a few hours or overnight.
- Drain marinade and place pork in a slow cooker. Add 1/2 can of Coke, garlic salt, and 1/4 cup of water. Cook on high for about 3 hours or low for 5-6 hours. Remove meat from slow cooker and shred. Drain liquid.
- In a food processor or blender, blend together remaining Coke, green chilies, enchilada sauce, and remaining brown sugar. Place pork back in the slow cooker. Cover with sauce and cook on low heat for 2 hours. You could also cook on high for one hour.
