Description

A quick, easy, tasty side dish that would compliment any meal. Try it on pizza!


Ingredients

  • Fresh baby spinach
  • 12 tablespoons Olive oil
  • 1 yellow bell pepper, chopped
  • 1 shallot, finely chopped
  • 1 garlic clove, minced
  • 23 tablespoons bacon pieces
  • sea salt & black pepper to taste

Instructions

  1. Heat olive oil over medium-high heat.
  2. Add everything except the spinach and saute until slightly softened and aromatic.
  3. Add spinach and saute, stirring frequently, until wilted or cook until desired consistency.
