Lemon Apricot Cake

Ingredients

  • 1 box Duncan Hines Lemon Supreme Cake Mix
  • 1/2 cup sugar
  • 3/4 cup coconut oil (or vegetable oil)
  • 1 cup apricot nectar (I use Jumex brand)
  • 4 large eggs
  • powdered sugar
  • juice of 2 lemons

Instructions

  1. Mix cake, sugar, oil and nectar together. Add eggs one at a time.
  2. Bake in a greased tube or bundt pan at 325 degrees F. for approximately 1 hour.
  3. Mix glaze ingredients and pour over warm cake.
